Shannon, another difference between sugar maples and silver maples is the sugar content of the running sap. I tap my silver maples. The ratio of sap to finished syrup is 70:1. Sugar maples are about 40:1. So I have to boil almost twice as much sap as those lucky sugar maple guys.
